Cook Gourmet - Bagel Sandwiches with Oat Patties (Recipe aligned with Bagrry's)

I received my magic box of Bagel Sandwiches with Oat Patties. 



Bagel originated in Poland. The traditional bagel making involves shaping the dough in the form of a ring by hand, boiling and then baking it. 

The Bagel Sandwich stuffing is an Exotic Patty made using Broccoli, Peanuts, Ginger, Garlic, Oat Atta and some Indian Spices. 

Ingredients -- 
  • 1 cup Bagrry's Oat Atta
  • 1.5 tsp Olive Oil
  • 4 tbsp Olive Oil for Patties
  • 2 cup Broccoli (roughly grated)
  • 150 gms Paneer (Cottage Cheese) Grated
  • 2 Green Chillies (Finely Chopped)
  • 1/2 Cup Peanuts (Roasted & Crushed)
  • 2 tsp Garlic (Chopped) 
  • 1 tsp Ginger (Chopped)
  • 1 tsp Salt
  • 1/2 tsp Garam Masala
  • 1/2 tsp Red Chilli Powder
  • 6 seeds of Green Cardamom (Crushed) 
  • 1 tbsp Butter
  • 2 tbsp Cornflour
  • 4 Bagels
  • 4 Cheese Slices
  • 4 tbsp Mayonnaise
  • 1/4 cup Pickled Onions
  • 4 Lettuce Leaves
Directions --

Step 1 - Heat a non stick pan with 1.5 tsp of Olive oil over medium heat for 1 minute. Add Green Chilli, Garlic and Ginger. Cook on medium heat for 1 minute. Now add the Broccoli and Salt and stir on medium heat for 3 minutes, until Broccoli is cooked and has lost its water.

Step 2 -  To the cooked Broccoli add, Oat Atta, Peanuts and stir for 30 seconds over low heat. Add Garam Masala, Red Chilly Powder and Cardamom seeds. Stir for another 30 seconds on low flame.

Step 3 - Now add Grated Paneer and Butter. Mix well until butter has melted and is mixed well with the mixture on low heat. This should take about 1 minute. Now switch off the flame, transfer mixture to a bowl.

Step 4 - Let the mixture cool for about 3 minutes. Add Cornflour to it and mix well. Cornflour will help to bind the patties together and prevent breaking while cooking. Divide the mixture into 4 parts and make round fatties, keeping them a little thick.

Step 5 - Heat a non stick pan with Olive oil over high heat for 2 minutes. Now place the patties and cook them for 3 minutes on each side (6 minutes to be exact), until they are golden brown. Switch off heat and keep aside.
Tip : If you put the patties on the non stick pan without oil, they will not spread from the base. Only when you turn the patty, brush some oil on the turned side. 

Step 6 - Cut Bagels in two halves. On the bottom half apply Mayonnaise, add a Lettuce Leaf on top followed by cooked Patty, Pickled Onion and a Slice of Cheese. Close the Bagel Sandwich and Serve.
